  • 2 packages (1/4 ounce each) active dry yeast
  • 1 cup warm water (110° to 115°)
  • 2 cups bread flour
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 teaspoons sugar

  • 2 tablespoons olive oil

  • 1/2 medium red onion, sliced and separated into rings
  • 1/2 pound boneless skinless chicken breast, cut into 1/4-inch strips

  • 2/3 cup hickory smoke-flavored barbecue sauce
  • 1-1/2 cups shredded part-skim mozzarella cheese
  • 1-1/2 cups shredded reduced-fat Mexican cheese blend

    In a large bowl, dissolve yeast in warm water. Stir in the flours, oil, sugar and salt until smooth. Turn onto a lightly floured surface; knead until smooth and elastic, about 6 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 45 minutes.

    Punch down dough; let stand for 10 minutes. Roll out to a 15x10-in. rectangle. Place in a 15x10x1-in. pan coated with cooking spray. Let stand for 10 minutes. Prick with a fork. Bake at 375° for 7 minutes.
