  • 1 envelope (40 serving size) low calorie lime flavoring
  • 1 c. boiling water
  • 1 c. cold water
  • 1/4 tsp. peppermint extract
  • 1 c. prepared low-calorie whipped topping

Directions

    Dissolve gelatin in boiling water.

    Add cold water and extract. Place bowl of gelatin in large bowl of ice water; stir until slightly thickened.

    Whip until about doubled in volume.

    Blend in the whipped topping.

    Spoon into individual dessert dishes. Chill until set, about 1 hour.
