- 1 c. boiling water
- 1 c. cold water
- 1/4 tsp. peppermint extract
- 1 c. prepared low-calorie whipped topping
Directions

1Dissolve gelatin in boiling water.

2Add cold water and extract. Place bowl of gelatin in large bowl of ice water; stir until slightly thickened.

3Whip until about doubled in volume.

4Blend in the whipped topping.

5Spoon into individual dessert dishes. Chill until set, about 1 hour.
