Ingredients
- 7 green peppers, cut into 1/4in slices
- 7 red peppers, cut into 1/4 in slices
- 7 yellow peppers, cut into 1/4 in slices
- Olive oil to cover bottom of stock pot to m1/4 inch
- 4-6 garlic cloves diced
- 1 tsp black pepper
- 2 tbsp salt
- 2c red wine vinegar
- Salt to taste
Directions

1Cook peppers in olive oil, with garlic, salt and pepper, covered on moderate heat, for 20 minutes.

2Add red wine vinegar and continue cooking until peppers are soft. 20-30 minutes

3Serve warm or cold
