  • 1 Tbsp. oil
  • 1/2 lb. (225 g) fresh mushrooms, sliced
  • 1 green pepper, cut into thin strips
  • 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cloves garlic, minced
  • 2 cups Classico di Napoli Tomato & Basil Pasta Sauce
  • 1 cup water
  • 1 egg, beaten
  • 2 cups low fat cottage cheese
  • 1/4 cup Kraft 100% Parmesan Shredded Cheese
  • 9 oven-ready lasagna noodles
  • 2-1/2 cups Kraft Shredded Pizza Mozzarella Cheese
  • 75 g pepperoni slices

Directions

    Heat oil in large skillet on medium-high heat.

    Add vegetables and garlic; cook 10 min.

    or until mushrooms release most of their liquid, stirring occasionally.

    Stir in pasta sauce and water; simmer on medium-low heat 5 min., stirring occasionally.

    Heat oven to 375F.

    Mix egg, cottage cheese and Parmesan until blended.

    Spread 1 cup sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray; top with layers of 3 noodles and 1/3 each of the cottage cheese mixture, remaining sauce, mozzarella and pepperoni.
