Ingredients

  • 2 c. persimmon pulp
  • 2 c. sugar
  • 1 1/2 c. flour
  • 1 tsp. soda
  • 1 1/2 c. buttermilk
  • 1 tsp. baking powder
  • 1/8 tsp. salt
  • 2 large eggs
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/4 c. cream (canned Milnot will do)
  • 1/2 stick butter

Directions

    Add sugar to persimmon pulp.

    Add well beaten eggs; stir well. Add soda to milk and stir until foaming ceases.

    Add milk to 1st mixture and stir.

    Sift flour, salt and baking powder.

    Sift into persimmon mixture.

    Beat well.

    Add vanilla, cinnamon and cream. Put butter into the pan your in and melt.

    Pour into batter. Reserve enough to grease pan well.

    Beat well and pour into baking pan.

    Bake at 325° for 1 hour or until done.
