- 1 c. persimmon pulp
- 1 1/2 c. sugar
- 1/2 c. melted margarine
- 1 3/4 c. milk
- 3 eggs
- 1/2 tsp. baking powder, salt and baking soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 2 c. plain flour
- 1 c. grated sweet potato
- 1 c. coconut (optional)
Directions

1Preheat oven to 350°.

2Melt margarine in a 9 x 13-inch pan, greasing entire pan.

3Mix together all the ingredients. Pour into pan, mixing margarine into batter.

4Bake for 45 minutes until brown on top and crusty at edges.
