- 2 eggs
- 1 c. sugar
- 1 c. milk
- 1 c. persimmon pulp
- 1 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 c. butter
Directions

1Beat eggs with electric mixer in a large bowl on high speed for about 4 minutes.

2Gradually add sugar.

3Beat at medium speed about 5 minutes.

4Combine milk and persimmon pulp.

5Combine flour and baking powder.

6Add persimmon mix and flour mix to egg mix.

7Beat until combined.

8Pour in a greased and floured 9 x 9-inch baking pan.

9Bake at 350° for 35 to 40 minutes.

10With a fork, poke holes in top of pudding and pour batter slowly over pudding.

11Bake 15 minutes more.
