- 2 c. persimmon pulp
- 2 c. sugar
- 3 eggs, beaten
- 1 Tbsp. vanilla
- 1 tsp. salt
- 1 small grated sweet potato
- 2 c. flour
- 1 c. canned milk
- 3 Tbsp. baking powder
- 1 tsp. baking soda
Directions

1Mix the persimmon pulp and sugar.

2Add beaten eggs, milk and vanilla flavoring.

3Sift dry ingredients and add grated potato. Add to liquid mixture.

4Pour in greased baking dish.

5Bake at 300° for 1 hour and 10 minutes.
