Persimmon Spoon Pudding

- 2 c. persimmon pulp
- 1 1/2 c. sugar
- 2 eggs, beaten well
- 2 c. flour
- 1/2 tsp. soda
- pinch of salt
- 2 Tbsp. butter
- 1 qt. sweet milk
Directions

1Mix beaten eggs with pulp. Add sugar. Sift flour, soda and salt. Add alternately to mixture with milk. Add 2 tablespoons melted butter. (The mix will be quite thin.) Bake 45 minutes to 1 hour in a 350° oven in a large ovenproof bowl or casserole or until dark (like chocolate) and grainy, but not dry.

3Serve warm with whipped cream.
