  • 2 large tomatoes, sliced
  • 1/4 stick butter
  • 1 Tbsp. prepared mustard
  • 1/2 tsp. dry mustard
  • 2 tsp. Worcestershire sauce
  • 12 strips bacon
  • 1 lb. sharp Cheddar cheese, cut in 1/2-inch cubes
  • 4 English muffins
  • sugar
  • salt
  • pepper
  • 1/2 tsp. paprika
  • 1/2 c. dark beer
  • 2 drops Tabasco
  • 2 egg yolks
  • 1/4 c. whipping cream

Directions

    Sprinkle tomato slices with sugar, salt and pepper; broil on both sides and keep warm.

    Saute the bacon.

    Drain and keep warm. Melt the butter in a double boiler over simmering water.

    Add mustards, Worcestershire, paprika, Tabasco and blend.

    Add cheese. Allow most to melt, stirring frequently.

    Add beer and continue stirring until the cheese is completely melted.

    Beat the egg yolks with the cream and add slowly to the cheese mixture, stirring until thickened, about 3 to 5 minutes.

    Meanwhile, toast the split muffins.

    Layer the tomatoes and bacon on the muffins and spoon the thickened sauce over all.
