- 1 large onion
- 1/2 green pepper
- 3 stalks celery
- 1 carrot
- 2 lb. red snapper fillets
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 2 Tbsp. olive oil
- 1 (1 lb.) can tomatoes
- 2 Tbsp. ketchup
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1Peel onion and chop fine.

2Seed green pepper and chop.

3Chop celery and carrot.

4Place fish fillets on large plate.

5Sprinkle with lemon juice and salt.

6Let stand 30 minutes.

7Place fillets in a 9 x 13-inch bake pan, discarding excess lemon juice.

8Heat olive oil in 10-inch frypan over medium heat.

9Saute onion, green pepper, celery and carrot 5 minutes, stirring with fork.

10Add tomatoes, ketchup, salt and pepper.

11Cover and simmer 30 minutes.

12Pour vegetables over fillets.

13Bake 35 minutes at 400°.
