- salt and pepper to taste
- 2 c. crackers, crumbled (Ritz or saltines)
- butter and oil for frying
Directions

1Place chicken breasts between layers of wax paper and pound flat.

2Marinate in clam juice 3 to 6 hours, turning often.

3Salt and pepper, then roll in cracker crumbs.

4Saute in equal parts oil and butter until a golden brown.
