- 20 Ritz crackers
- 1 c. chopped pecans
- 1 tsp. baking powder
- 3 egg whites
- 1 c. sugar
- 1 tsp. vanilla
- Cool Whip and pecan pieces for topping
Directions

1Crumble the crackers and mix together with pecans and baking powder; set aside.

2Beat the room temperature egg whites until fluffy.

3Add sugar gradually.

4Add vanilla.

5Fold nut and cracker mixture into the egg white mixture and place into a well buttered pie pan.

6Bake at 325° for 30 to 40 minutes.

7Top with Cool Whip and pecan pieces and chill.
