  • 1 peck green tomatoes, sliced
  • 3 lb. onions, sliced
  • 3 large green peppers, sliced
  • 3 red peppers, sliced
  • 1 c. salt
  • 2 c. sugar
  • 1 1/2 qt. vinegar
  • 1 c. whole mixed pickling spice
  • 2 c. water

    Put vegetables in a kettle in layers with salt sprinkled between.

    Let stand overnight.

    Drain.

    Rinse with cold water. Drain again.

    Cook vegetables with sugar, vinegar, pickling spice and water until mixture has thickened slightly.

    Pour into jars. Makes 7 quart jars.
