- 2 c. sugar
- 2 sticks cinnamon
- 1 Tbsp. allspice
- 1 1/2 tsp. salt
- 3 1/2 c. vinegar
- 1 1/2 c. water
- 3 qt. peeled beets, cooked
Directions

1Wash beets.

2Leave 1 inch of stem and top root to prevent bleeding.

3Cover with boiling water and cook until tender. Combine all ingredients, except beets; simmer 15 minutes.

4Pack beets into jars, leaving 1/2 inch head space.

5Remove cinnamon from liquid.

6Pour boiling hot liquid over beets.

7Adjust lids. Process 30 minutes in boiling water bath.

8Makes about 6 pints.
