- beets
- 1 c. sugar
- 1 c. vinegar
- 1 tsp. allspice
Directions

1Select young, tender, sweet beets.

2Trim off tops, leaving 1-inch of stem.

3Leave stem and top root to prevent bleeding and loss of color.

4Wash thoroughly.

5Cover with boiling water and cook until done (when fork slips in easily).

6Remove skins and roots.

7Small beets may be left whole.

8Place beets in mixture of sugar and vinegar.

9Bring to boil.

10Place in pint jars.
-
11Add allspice to each pint jar.
-
12Be sure liquid covers beets.
-
13Seal with new lids and rings that have been in boiling water.
