Ingredients

  • 1/2 cup vinegar
  • 1/2 cup beet juice
  • 2 tablespoons sugar
  • 2 cloves
  • 1/2 teaspoon salt
  • 3 peppercorns
  • 1/4 of a bay leaf
  • sliced canned or cooked beets (reserve liquid)
  • sliced green peppers (optional)
  • sliced purple onions (optional)
  • whole garlic cloves (optional)

Directions

    Drain sliced beets reserving liquid.

    Pack into quart jars adding optional ingredients if desired.

    In a saucepan combine vinegar and beet juice.

    Bring to a boil then add: sugar, cloves, salt, peppercorns, and bay leaf.

    Return to boil until well blended. Pour slightly cooled mixture over beets.

    Add more juice to fill jar.

    Chill and serve.
