  • 4 c. water
  • 6 c. vinegar
  • 5 to 7 lb. beets
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 1 tsp. cloves
  • 1 tsp. salt
  • 1/2 tsp. mustard seed
  • 1 tsp. black pepper

    Boil beets until tender.

    Slip skins off in cold water.

    Keep beets hot in warm oven.
