- cooked beets, sliced or quartered
- 2 c. sugar
- 2 c. water
- 2 c. vinegar
- 1 lemon, sliced thin
- 1 Tbsp. cinnamon
- 1 tsp. cloves
- 1 tsp. allspice
Directions

1Slice cooked beets into large saucepan.

2Make a pickling syrup of the sugar, water and vinegar.

3Add lemon slices.

4Mix spices; add to syrup.

5Pour this mixture over the sliced beets.

6Bring to light boil, then simmer for 15 minutes.

7Heat seals and lids in boiling water.

8Seal in hot jars.

9Let hot jars stand for 24 hours to be sure of seal.
