- 1 peck beets
- 2 c. vinegar
- 2 c. sugar
- 2 Tbsp. pickling spice (wrapped in a piece of old hose)
- 1 c. water
Directions

1Bring beets to a slow boil; cook until tender and skins peel off easily.

2At this stage, you just boil the beets in water and then discard this water.

3Boil remaining ingredients together and add beets.

4Bring back to a boil.

5Pack and seal in jars.
