  • 2 tsp. salt
  • 2 c. sugar
  • 2 Tbsp. pickling spice

    Wash, quarter and pack raw green tomatoes into pint jars. Add to each jar 2 or 3 small whole pods hot pepper and 1/4 bell pepper. Make a brine of 2 parts vinegar, 1 part sugar and 1 part water. Heat until sugar melts, then pour over packed but not closed jars. Seal and process 15 minutes in hot water bath.
