- 1 lb. carrots
- 1 Tbsp. pickling spice
- 3 c. water
- 1 c. vinegar
- 1 c. sugar
- 1/2 tsp. salt
Directions

1Peel carrots and cut into strips 4-inches long and 1/4-inch thick.

2Put spices into bag.

3Mix water, sugar, salt and spice. Bring to a boil.

4Simmer for 5 minutes.

5Add carrots.

6Cook for 3 minutes.

7Carrots will be crisp.

8Take out spice bag and store carrots in refrigerator for 2 or 3 days before serving.
