  • 4 or 5 carrots, chunked or baby carrots
  • 1 c. sugar or NutraSweet
  • 1/2 c. olive oil
  • 3/4 c. seasoned vinegar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 tsp. dry mustard
  • 1 can tomato soup
  • 1 medium onion, sliced
  • 1 medium diced green pepper

    Cook carrots until tender.

    Do not overcook.

    Combine everything and let set overnight.

    May add cucumbers or cauliflower, etc.
