- 2 c. white vinegar
- 2 Tbsp. sugar
- 1 medium onion, sliced and separated into rings
- 1 tsp. salt
- 1 tsp. whole mixed pickling spice
- 12 hard-cooked eggs
Directions

1In a medium saucepan, combine all ingredients except the eggs. Simmer over low heat, uncovered, until the onions are tender, about 10 minutes.

2Arrange the eggs in two 1-quart jars with tightly fitted lids.

3Pour 1 cup of vinegar mixture over the eggs in each jar.

4Cover and refrigerate several hours or overnight. Eggs may be stored in the refrigerator for up to 2 weeks.
