- 2 c. salt to 1 gal. water
- 4 c. white vinegar
- 1 c. water
- 1/2 to 2/3 c. sugar
- 1 Tbsp. mixed pickling spice
- sliced lemon

Directions

1Make a brine of water and salt (2 cups salt to 1 gallon of water).

2Have fish skinned and cut in quite small pieces.

3Soak fish pieces in this brine for 24 hours.

4Rinse off quickly in cold, fresh water.

5Pour off immediately.
