- 20 herring fillets
- 6 1/4 c. white vinegar
- 2 1/2 c. water
- 3 c. sugar
- 1 can bay leaves
- 1 can allspice
- red onion, sliced
Directions

1Soak fillets in cold water for 6 hours, changing water often. Rub fillets under cold water until not slick.

2Combine above ingredients; heat until sugar dissolves.

3Cool.

4Layer slices of herring, sliced red onion, bay leaves and whole allspice.

5Add brine; let stand for 3 days.
