Ingredients
- 4 salt herrings milt (soft white roe)
- 2 Tbsp. oil
- 1/2 c. apple cider vinegar
- 1/2 c. water
- 6 peppercorns
- 2 bay leaves
- 1 large onion, sliced
Directions

1Wash herrings thoroughly and soak in cold water for 12 hours, changing water twice.

2Remove the head, tail and entrails; save the milt.

3Remove the skin and bones.

4Rinse the fillets well and drain.

5Cut each fillet into 4 to 5 pieces.

6Put the milt through a sieve; combine with oil.

7Boil vinegar, water, peppercorns and bay leaves for 10 minutes; cool.

8Blend with milt mixture; place in jar.

9Cover tightly and let stand for 1 day.

10Arrange attractively, garnish with chopped parsley or chives.
