Pickled Shrimp

Ingredients

  • 2 1/2 lb. shrimp
  • 1/2 c. celery leaves
  • 1/4 c. pickling spices
  • 1 Tbsp. salt
  • 2 c. sliced onions
  • 7 bay leaves
  • 1 1/2 c. salad oil
  • 3/4 c. white vinegar
  • 3 Tbsp. capers and juice
  • 2 1/2 tsp. celery seed
  • 1 1/2 tsp. salt

Directions

    Boil the shrimp in their shells with the celery leaves, pickling spices and 1 tablespoon salt for 5 minutes.

    Drain shrimp and clean.

    Place shrimp in covered container with a mixture made from the remaining ingredients for 24 hours.

    Serve on toothpicks with pineapple cubes, green peppers and cheese cubes.
