Ingredients

  • 8 c. sliced squash
  • 2 c. chopped onions
  • 1/2 green pepper, chopped
  • 7 oz. jar pimento, chopped
  • 1 Tbsp. salt
  • 2 c. vinegar
  • 3 c. sugar
  • 2 tsp. mustard
  • 1 tsp. dry mustard

    Mix squash, onion, pepper, pimento and salt.

    Let sit for 1 hour.

    Bring vinegar, sugar and mustard to a boil.
  4. 4
    After squash has been in salt for 1 hour, drain and add to vinegar mixture. Bring to a second boil.

    Place in jars and seal.
