  • 8 to 10 medium potatoes
  • 1 1/2 c. prepared ranch salad dressing
  • 2 c. shredded sharp cheddar cheese
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 lb. bacon (cooked and crumbled and divided)
  • Chopped fresh chives

Directions

    Peel and quarter potatoes;

    place in a large saucepan or kettle and cover with water.

    Bring to a boil;

    cook until tender. Drain and transfer to a large bowl;

    mash (do not add milk, butter or seasoning).

    Add salad dressing and mix well.

    Add cheese, salt, pepper and half of the bacon.

    Spread evenly into a greased 13x9x2-inch baking dish.

    Sprinkle with chives and remaining bacon.

    Bake uncovered, at 350°F. for 20 minutes.
