- 1 (14 oz.) can pimento
- 2 lb. Cheddar cheese
- 1/2 c. vinegar
- 1/2 c. water (use pimento juice plus water to make 1/2 c.)
- 2 Tbsp. flour
- 2 eggs
- 2/3 c. sugar
- 1 tsp. salt
Directions

1Mix flour, salt and sugar.

2Add water gradually.

3Add vinegar. Add slightly beaten eggs.

4Cook until thick.

5Set off to cool. Put cheese and pimento through food chopper.

6Add this to sauce and stir until cheese has softened and thickened the mixture.

7Add pimento juice if needed.
