  • 1 (14 oz.) can pimento
  • 2 lb. Cheddar cheese
  • 1/2 c. vinegar
  • 1/2 c. water (use pimento juice plus water to make 1/2 c.)
  • 2 Tbsp. flour
  • 2 eggs
  • 2/3 c. sugar
  • 1 tsp. salt

Directions

    Mix flour, salt and sugar.

    Add water gradually.

    Add vinegar. Add slightly beaten eggs.

    Cook until thick.

    Set off to cool. Put cheese and pimento through food chopper.

    Add this to sauce and stir until cheese has softened and thickened the mixture.

    Add pimento juice if needed.
