- 4 whole boneless chicken breasts
- 1/2 c. bread crumbs, seasoned
- 3/4 c. pine nuts, coarsely chopped
- 1/2 bunch parsley, chopped
- 1/2 c. flour
- 6 egg whites, stirred together until liquified
- 1/2 c. olive oil
- salt and pepper to taste
Directions

1Mix bread crumbs, pine nuts and parsley in a mixing bowl. Lightly flour chicken breasts.

2Dip them into the egg whites and then into the bread crumb mixture.

3Heat olive oil in skillet and saute breaded chicken until cooked through (about 5 to 8 minutes on each side).
