Pine Nut Crusted Chicken

  • 4 whole boneless chicken breasts
  • 1/2 c. bread crumbs, seasoned
  • 3/4 c. pine nuts, coarsely chopped
  • 1/2 bunch parsley, chopped
  • 1/2 c. flour
  • 6 egg whites, stirred together until liquified
  • 1/2 c. olive oil
  • salt and pepper to taste

Directions

    Mix bread crumbs, pine nuts and parsley in a mixing bowl. Lightly flour chicken breasts.

    Dip them into the egg whites and then into the bread crumb mixture.

    Heat olive oil in skillet and saute breaded chicken until cooked through (about 5 to 8 minutes on each side).
