Ingredients
- 2 cups pine nuts
- 2 tablespoons butter
- 1/2 pound alphabet pasta
- 1/2 cup parsley leaves minced
- 13 cup green bell peppers
- 13 cup sweet red bell peppers
- 1/4 cup lemon juice fresh
- 1/4 cup olive oil
- 1 x black pepper to taste
- 1 x parmesan, parmigiano-reggiano cheese, grated to taste
Directions

1In a large skillet, lightly toast the pine nuts in the butter; drain on paper towels and cool.

2Cook the alphabet pasta in boiling water; drain and rinse in cold water.

3(Be extra careful not to overcook the pasta.)

4Very gently, mix together all ingredients; cover and chill.
