Pine Nut Salad

  • 2 cups pine nuts
  • 2 tablespoons butter
  • 1/2 pound alphabet pasta
  • 1/2 cup parsley leaves minced
  • 13 cup green bell peppers
  • 13 cup sweet red bell peppers
  • 1/4 cup lemon juice fresh
  • 1/4 cup olive oil
  • 1 x black pepper to taste
  • 1 x parmesan, parmigiano-reggiano cheese, grated to taste

Directions

    In a large skillet, lightly toast the pine nuts in the butter; drain on paper towels and cool.

    Cook the alphabet pasta in boiling water; drain and rinse in cold water.

    (Be extra careful not to overcook the pasta.)

    Very gently, mix together all ingredients; cover and chill.
