Ingredients
- 3 1/3 c. cake flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 c. vegetable oil
- 3 eggs, slightly beaten
- 2 c. chopped ripe bananas (about 4 medium)
- 1 c. chopped pecans (optional)
- 1 1/2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple in own juice (undrained)
Directions

1Heat oven to 350°.

2Grease and flour 3 round pans, 9 x 1 1/2-inches.

3Mix flour, sugar, baking soda, salt and cinnamon in large bowl.

4Add oil and eggs.

5Stir until all dry ingredients are moistened.

6Do not beat.

7Stir in bananas, nuts, vanilla and pineapple.

8Divide batter evenly among pans.

9Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool ten minutes.

10Remove from pans.

11Cool completely on wire racks.

12Fill layers and frost side and top of cake with Cream Cheese Frosting.

13Sprinkle pecans on top of cake; cut with sharp knife.

14This is also good baked in a long sheet cake pan.
