- 1 (16 oz.) can pineapple chunks
- 1/4 c. brown sugar
- 2 Tbsp. cornstarch
- 1/8 to 1/4 tsp. ginger
- 1/2 tsp. salt
- 1/2 c. water
- 1/3 c. vinegar
- 2 (16 oz.) cans cut beets, drained
Directions

1Drain pineapple, reserving liquid.

2Mix dry ingredients.

3Add pineapple juice, water and vinegar.

4Cook until thickened, stirring constantly.

5Add beets and pineapple.

6Heat thoroughly. Serve hot or cold.
