- 1/2 c. butter or margarine, softened
- 1/2 c. sugar
- 2 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 8 oz. can crushed pineapple, undrained
- 1 tsp. vanilla
Directions

1Cream butter.

2Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.

3Combine flour, baking powder and salt; add to creamed mixture alternately with pineapple, mixing well.

4Stir in vanilla extract.

5Spoon batter into greased and floured 9 x 5 x 3-inch loaf pans.

6Bake at 350° for 55 minutes to 1 hour or until wooden pick comes out clean. Cool in pan 10 minutes; remove from pan and cool on a wire rack. Yields 1 loaf.
