  • 1/2 c. butter or margarine, softened
  • 1/2 c. sugar
  • 2 eggs
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 oz. can crushed pineapple, undrained
  • 1 tsp. vanilla

Directions

    Cream butter.

    Gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition.

    Combine flour, baking powder and salt; add to creamed mixture alternately with pineapple, mixing well.

    Stir in vanilla extract.

    Spoon batter into greased and floured 9 x 5 x 3-inch loaf pans.

    Bake at 350° for 55 minutes to 1 hour or until wooden pick comes out clean. Cool in pan 10 minutes; remove from pan and cool on a wire rack. Yields 1 loaf.
