- 2 c. sifted flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. granulated sugar substitute
- 1 beaten egg
- 2 Tbsp. vegetable oil
- 1 tsp. vanilla
- 1 c. crushed pineapple, packed in own juice (do not drain)
- 1 c. raisins
Directions

1Preheat oven to 350°.

2Grease 8 1/2 x 4 1/2-inch loaf pan. Sift flour with baking soda and salt into mixing bowl.

3Stir in sugar substitute.

4Combine egg, oil and vanilla.

5Add to dry ingredients, along with pineapple, stirring just until ingredients are moistened.

6Fold in raisins.

7Spread evenly in pan and bake 45 minutes or until done.

8For easier slicing, store overnight in refrigerator before serving.

9Yields 1 loaf (22 slices).
