Pineapple Bread Pudding

- 1/4 c. margarine, softened
- 1 (4 serving) pkg. instant vanilla pudding
- 1 tsp. cinnamon
- 3 eggs
- 3 c. milk
- 1 (8 oz.) crushed pineapple (in its own juice)
- 2/3 c. flaked coconut
- 1/2 c. raisins
- 1 tsp. vanilla
- 8 slices white bread, cut into 1/2-inch cubes
Directions

1Cream together margarine, pudding, vanilla and cinnamon until fluffy. Add eggs, one at a time.

2Beat well.

3In another bowl, combine milk, undrained pineapple, coconut, raisins and vanilla. By hand, blend milk mixture into creamed mixture (mixture will look curdled).

4Fold in bread cubes.

5Pour into an ungreased 2-quart casserole.

6Place casserole in a large shallow pan on the oven rack.

7Pour hot water into the larger pan to a depth of 1-inch.

8Bake in a 350° oven for 1 1/4 hours or until toothpick inserted comes out clean.
