- 1 1/2 c. sugar
- 1 c. margarine or butter (2 sticks), softened
- 2 2/3 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. lemon extract
- 1/2 tsp. salt
- 3 large eggs
- 1 (8 oz.) can crushed pineapple in pineapple juice
Directions

1Preheat oven to 325°.

2Grease and flour 10-inch Bundt pan. In large bowl with mixer at low speed, beat sugar and margarine or butter until blended.

3Increase speed to high; beat until light and fluffy, about 10 minutes.

4Reduce speed to low.

5Add flour and remaining ingredients.

6Beat until well mixed, constantly scraping bowl.

7Increase speed to high; beat 2 minutes, occasionally scraping bowl.

8Spoon batter into pan.

9Bake 50 to 55 minutes until toothpick inserted in center of cake comes out clean.

10Cool cake in pan on wire rack 10 minutes.

11Remove from pan.

12Cool completely.
