- 2 eggs
- 20 oz. can crushed pineapple
- 2 c. all-purpose flour
- 1 c. granulated sugar
- 1 c. brown sugar
- 2 tsp. baking soda
- 1 c. chopped walnuts
Directions

1In large mixing bowl, beat eggs until they're light and fluffy.

2Add pineapple undrained, flour, white and brown sugar and baking soda.

3Mix all ingredients well by hand, then stir in walnuts and spread the contents of the bowl evenly in an ungreased 13 x 9 x 2-inch baking pan.

4Bake in a 350° oven for 45 to 50 minutes or until toothpick inserted in middle comes out clean. After the cake cools, cover it with Cream Cheese Ginger Frosting, then sprinkle some additional chopped walnuts on top.
