  • 1 c. shortening
  • 2 c. sugar
  • 4 eggs, separated
  • 1/2 tsp. vanilla
  • 1/2 tsp. soda
  • 1 1/3 c. crushed pineapple, drained
  • 3 1/2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. pineapple juice

Directions

    Cream shortening and sugar. Beat in egg yolks, vanilla, soda and pineapple. Stir in flour, baking powder and salt alternating with pineapple juice. Beat egg whites stiff and fold into batter. Pour into greased 9 x 13 pan. Bake at 350° until toothpick comes out clean. Cool. Frost with white icing.
