- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 1 c. chopped walnuts
- 2 1/2 c. flour
- 2 c. grated carrots
- 1 large can crushed pineapple (don't drain)
- 1 tsp. soda
- 1 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
Directions

1Mix sugar and oil.

2Mix dry ingredients, then add to sugar and oil.

3Add carrots and blend well.

4Add eggs 1 at a time, beating well after each.

5Add nuts and pineapple.

6Blend well.

7Bake in 9 x 13-inch (lightly greased) pan at 350° for 1 hour.
