- 8 medium carrots
- 1 (20 oz.) can pineapple chunks, drained
- 2 Tbsp. butter
- 2 Tbsp. brown sugar, packed
- 1/2 c. dairy sour cream
- 1 tsp. salt
- 2 Tbsp. water
Directions

1Cut carrots into strips.

2Heat 1 inch of salted water to boiling.

3Add carrots; cover and cook until crisp-tender, about 5 minutes. Drain.

4Heat butter in skillet until melted.

5Add carrots, brown sugar and salt.

6Cook, stirring occasionally, for 5 minutes.

7Stir in pineapple chunks.

8Heat until pineapple is hot. Remove from heat.

9Stir in sour cream and water.

10Makes 6 servings.
