  • 1 (20 ounce) can chunk pineapple, drained (save juice)
  • 1 c. sharp cheddar cheese, grated
  • 1/2 c. sugar
  • 3 tsp. flour
  • 1/2 to 1 c. crushed Ritz crackers
  • 1/4 c. butter, melted

    Mix sugar and flour with about 3 Tbls. pineapple juice. Add pineapple chunks and cheese; mix well. Spoon into

    1 qt. casserole dish. Sprinkle crumbs over top, then pour melted butter over top. Bake 325° to 350° for 45 minutes.
