  • 2 cans chunk pineapple, drained (save juice)
  • 1 c. sugar
  • 6 Tbsp. plain flour
  • 6 Tbsp. pineapple juice
  • pinch of salt
  • 2 c. grated cheese, divided
  • 1 c. crushed Ritz crackers
  • 1/2 c. melted butter

Directions

    Mix sugar, flour and salt. Add juice and stir until smooth. Add 1 1/2 cups of cheese and pineapple and mix. Put in 9 x 12-inch pan and top with melted butter and crackers. Sprinkle with cheese (1/2 cup). Bake at 350° for 20 to 30 minutes.
