Pineapple Casserole

  • 1 (20 oz.) can pineapple tidbits
  • 1/2 c. sugar
  • 3/4 stick melted butter
  • 3 Tbsp. flour
  • 1/2 c. Ritz cracker crumbs
  • 1 c. shredded cheese

Directions

    Drain pineapple, reserving 3 tablespoons liquid.

    Combine sugar and flour and stir in reserved juice.

    Add cheese and pineapple chunks.

    Mix well.

    Spoon mixture into 1-quart buttered casserole dish.

    Combine melted butter and cracker crumbs. Sprinkle on top of casserole and bake at 350° for 25 to 30 minutes until light brown.
