Pineapple Cheese Ball

  • 2 (8 oz.) pkg. cream cheese, softened
  • 2 (8 1/2 oz.) cans crushed pineapple, well drained
  • 1 c. chopped pecans
  • 1/4 c. finely chopped green pepper
  • additional pecans, finely chopped

Directions

    In a medium bowl with fork, beat cream cheese until smooth. Stir in crushed pineapple gradually, 1 cup of pecans and green pepper.

    Refrigerate a few hours for easier handling.

    Shape into ball.

    Roll in the additional pecans.

    Wrap in plastic, then foil. Refrigerate until well chilled, overnight.

    Serve with crackers.
