Pineapple-Cheese Boat

  • 1 pineapple
  • 1 c. strawberries, cut in half, reserving 4 whole strawberries
  • 1 c. cantaloupe balls
  • 8 oz. cheddar cheese, cubed into 1/2 inch cubes
  • 1/4 tsp. ground ginger
  • 2 Tbsp. lime juice
  • 2 Tbsp. chopped almonds
  • pineapple yogurt

Directions

    Cut pineapple lengthwise into quarters through green top.

    Cut along edges of quarters to remove fruit.
  3. 3
    Cut pineapple core off of fruit, and cut fruit into bite-sized pieces.

    Place pineapple chunks, halved strawberries and melon balls into a large bowl. Sprinkle with ginger and lime juice; toss.

    Stir in cheese.

    Spoon fruit mixture into shells.

    Sprinkle with almonds.

    Spoon yogurt onto each serving, and garnish with whole strawberries.
