Pineapple Cheese Pie

- 1 lb. cottage cheese
- 1 egg
- 3 pkg. Sweet 'N Low
- 1 (20 oz.) can crushed pineapple, drained
- 2 tsp. each: vanilla, coconut extract and lemon juice
- 1 pkg. Knox unflavored gelatine
Directions

1Drain all juice into blender.

2Add all ingredients except the pineapple to the blender.

3Blend until smooth and creamy.

4Put pineapple into 9-inch pie plate or baking dish to form crust. Pour blended mixture over pineapple and sprinkle with cinnamon. Bake at 325° for 30 to 35 minutes.
