- 1 9-inch graham cracker crust
- 1/2 c. boiling water
- 1 envelope gelatin
- 1/2 c. sugar
- 1/2 c. pineapple juice (or lemon or lime juice to make a lemon cheesecake or lime cheesecake)
- 8 oz. cream cheese, softened
- whipped cream
Directions

1Dissolve gelatin in boiling water; stir until completely dissolved.

2Add sugar and pineapple juice and allow to cool. Soften cream cheese and gradually stir in gelatin mixture until well blended.

3Pour into pie shell and refrigerate until firmly set.

4Top with whipped cream before serving.
